Allium offers an orchard kitchen, almost entirely using 100% Mexican products and based on the work of artisan producers, as well as the urban orchard that is located on the roof of the restaurant. The concern of always having the best products is the central engine of Allium. We use products at the optimum point of freshness and maturity, with the least intervention on our part, allowing the quality of the product to be expressed on the plate and to be the protagonist. Whether they are cheeses from Atotonilco, vegetables from Ajijic, fish and shellfish from Ensenada or Nayarit, mushrooms from Tapalpa or honeycomb from Veracruz, it is the small producers, through their work, who help us shape the restaurant’s cooking philosophy. and whom we try to honor with it: letting the product express itself on the plate. Allium ofrece una cocina de huerto, utilizando casi en su totalidad producto 100% mexicano y basada en el trabajo de productores artesanales, así como el huerto urbano que se localiza en la azotea del restaurante. La inquietud de contar siempre con los mejores productos, es el motor central de Allium. Utilizamos productos en el punto óptimo de frescura y madurez, con la menor intervención de nuestra parte, permitiendo que la calidad del producto se exprese en el plato y sea el protagonista. Ya sean quesos de Atotonilco, hortalizas de Ajijic, pescados y mariscos de Ensenada o Nayarit, hongos de Tapalpa o panal de miel de Veracruz, son los pequeños productores, mediante su trabajo los que nos ayudan a darle forma a la filosofía de cocina del restaurante y a quienes tratamos de honrar con la misma: dejar que el producto se exprese en el plato.
